Happy National Fruit Cocktail Day!

National Fruit Cocktail Day is on May 13…so HAPPY NATIONAL FRUIT COCKTAIL DAY! I actually don’t remember the last time I ate fruit cocktail, but when I was growing up, it was a real treat when it was on our supper menu. Sometimes Mom added it to jello for a really special dessert.


Mom read cookbooks like other people read novels. She usually had a cookbook beside her chair, waiting to be searched through. She was a great cook and was always looking for a new recipe to try. After she tested new ones and made sure they were good, she shared them with me. It seems like a little thing, but I really miss swapping recipes with her! I have many that she typed on index cards years ago…and a lot of handwritten ones too. They are a treasure to me! There are a couple of recipes she knew by heart that I still wish I had written down. I just can’t get them exactly right…they don’t taste the same.

Fruit Cocktail Cake is an old, old recipe, one my grandmother and my mother made many times. It’s delicious! On Mom’s 82nd birthday I made one for everyone at the memory care home to enjoy. Mom seemed to have never heard of it that day, but she was happy to have a piece and loved it! Little did we know that it would be our last birthday celebration with her. I will always think of this birthday when I think of Fruit Cocktail Cake.

So…here you go…I hope you enjoy…

Fruit Cocktail Cake

For the cake: 2 c self-rising flour, 1 can fruit cocktail in heavy syrup, undrained, 2 eggs, 1 tsp vanilla, 1 ½ c sugar

For the sauce: 1 stick (1/2 cup) unsalted butter, 1 c evaporated milk, 1 c sugar, 1 tsp vanilla, 1 c coconut, 1 c chopped pecans

Mix all cake ingredients at low speed. Pour into greased and floured 9×13 pan. Bake at 350 for 45 minutes or until toothpick comes out clean. Boil first 4 icing ingredients for 2 minutes. Add coconut and pecans. Pour over warm cake.

  3. Tracie, I am convinced now that your Mom and my Mom were kindred spirits. My Mom sat and read cookbooks as if each one was her favorite novel and I love that she often used a Kleenex or a paper towel as her book mark. Her cookbooks had their own book shelf. I kept that sweet little bookshelf. She painted it a beautiful blue at one time.
    What priceless memories.
